Any Carpigiani batch freezer makes the gelato, ice cream or sorbet for this mould. On Crystal-enabled models, the Crystal dispensing door fills moulds, cakes and take-away tubs directly with high-overrun gelato and sorbet, using your existing recipes.

Blast freeze for sharp shapes and smooth texture

A Techfrost blast freezer hardens moulded gelato quickly, so it forms small ice crystals, keeps a smooth texture and releases with sharp edges. Gelato hardening from −10 °C to −18 °C takes about 15 minutes. Store finished desserts in the EG54 plus vertical storage freezer.
