The basics

Four things behind every frozen dessert recipe

Sugar

Sets sweetness and softness. Too little and the dessert freezes hard and icy; too much and it will not hold its shape.

Solids and fat

Milk solids, fat and fibre give body and creaminess. Gelato uses mostly milk; sorbet gets its body from fruit.

Air

Gelato is churned slowly for a dense texture with little air. Soft serve and froyo machines add more air for a lighter texture.

Temperature

Gelato is served at about −12 °C, warmer than the −18 °C of ice cream, so it is softer and the flavour comes through.

Frozen dessert recipes: frequently asked questions

Which frozen dessert suits my business?

A gelato shop makes gelato and sorbet in a batch freezer and scoops it from a display cabinet. A café, kiosk or quick-service venue usually prefers express gelato, soft serve or frozen yoghurt from a countertop machine, made to order. Slush adds a high-margin drink with very little labour.

Do I need a different machine for each dessert?

Gelato and sorbet are made in a batch freezer. Express gelato, soft serve and frozen yoghurt come from a soft serve-type machine. Slush and granita need a slush machine. Our team will match a machine to your menu and volume.

Can I get the recipes?

Yes. Our sales and support team and our in-house chefs give you the recipes and method for your base and machine, and show you at a free demonstration in our showrooms.

Where do I buy the ingredients?

Every flavour idea links to the Rubicone or Summer Coast product behind it, sold by Majors Group. Rubicone is stocked in every Majors Group warehouse with no minimum order.

Do you offer gelato training?

Yes. We run Carpigiani Gelato University courses in Australia, from basic gelato to recipe balancing.
