Specifications. Operating ranges from −16 to −10 °C for gelato, dual-temperature models running gelato and pastry together, and a 70 cm tower that can be set anywhere from +5 to −20 °C. Static or ventilated refrigeration, with automatic, electric or hot-gas defrost depending on the model.
