What you need to open a frozen pastry store

Frozen pastry is all about temperature control: cook and cool creams accurately, freeze them quickly, then display them at their best.

How to open a frozen pastry store, step by step

1

Define your range

Gelato cakes, semifreddo, single-serve desserts or wholesale to cafés: your range sets your equipment.

2

Set up production

A pastry machine for creams and fillings, a blast freezer and storage freezers sized to your output.

3

Choose your display

Pastry and combi cabinets that hold frozen desserts at serving temperature.

4

Develop recipes

Build and cost recipes with Rubicone ingredients and Silikomart moulds.

5

Train your team

Learn the machines and techniques. See the Carpigiani pastry demonstration.

6

Launch and package

Branded take-home packaging for cakes and desserts helps you sell to go and wholesale.

Technology other brands don't offer

The brands we represent engineer their own control systems and refrigeration, giving you features, functionality and efficiency you won't get from everyday equipment. Features vary by model, so ask us which machines include them.

01Exclusive to Carpigiani

Hard-O-Tronic®

Detects when gelato reaches the ideal texture and holds it there until the batch is extracted, so every batch is consistent.

02Exclusive to Carpigiani

Teorema remote diagnosis

Monitor the machine over the internet. Our technicians can see what the machine sees, for faster service and less downtime.

03Exclusive to Carpigiani

Crystal program

Semi-dense Crystal gelato for gelato cakes and take-away tubs, filled straight from the batch freezer with the Crystal dispensing door.

04

Self-pasteurisation

Soft serve machines that pasteurise their own mix, so full wash-downs can be spaced out to as long as 42 days.

05

Black-out protection

After a power or water outage the machine checks time and temperature, then resumes or re-pasteurises to keep the mix safe.

06

Scheduled start

Production, pasteurisation and storage programs run automatically, for example overnight, so you open ready to serve.

07

Direct expansion cylinders

Optimised refrigeration for quicker freeze-down, less product waste, higher quality and lower energy use.

08

Techfrost blast freezing

Gelato hardening from −10 °C to −18 °C in 15 minutes, and blast chilling from +90 °C to +3 °C in 90 minutes.

Frequently asked questions

What equipment do I need for frozen pastry?

Usually a pastry machine to cook and cool creams, a blast freezer, storage freezers and a pastry display cabinet, plus moulds. We put together the right set for your range.

Why do I need a blast freezer for frozen desserts?

Fast freezing forms small ice crystals, so cakes and semifreddo keep a smooth texture and hold their shape. A standard freezer is too slow.

Can one machine make gelato and pastry creams?

Some Carpigiani machines, such as the Maestro HE, make gelato as well as creams and fillings. Ask us which suits your menu.

Can I see the machines working?

Yes. Contact us to arrange a demonstration at one of our showrooms.

Can I finance my pastry equipment?

Yes. See finance options or call 1800 625 677.

Who services pastry machines and blast freezers?

Our national service team, with genuine parts and qualified technicians Australia-wide. Call 1300 005 777.
