Gelato Pastry University Marks Five Years with a Masterclass Series

Gelato Pastry University, the first training programme in the world dedicated to gelato pastry, celebrated its fifth anniversary with a new community portal and an online masterclass series. It opened in Tokyo, Japan, in September 2015, and has since hosted seminars, courses and masterclasses with renowned international pastry figures.

The masterclass line-up

  • 13 November, 3:00 pm Malaysia time (GMT+8): Otto Tay, who won gold for Malaysia at the Coupe du Monde de la Pâtisserie in Lyon, a historic victory for pastry in Asia.
  • 17 November, 10:00 am Italy time (GMT+1): Francesco Boccia, the Italian champion who took gold in Lyon in 2015, returning Italy to the top of the podium after 18 years.
  • Three further episodes in 2021: Stéphane Augé, French MOF and pastry professor at the Lycée Hôtelier in Bordeaux; Karim Bourgi, executive pastry chef of the Al Mana group and chef for La Maison du Chocolat Paris in the Middle East; and award-winning Japanese pastry chef Hiroyuki Emori.

Why an all-digital celebration

Technical director Alessandro Racca, a gelato master known as the godfather of frozen pastry, explained that the team debated whether to mark the anniversary in such a difficult year. They concluded that hard times are exactly when the professional community needs enriching. Since early March 2020 the school had experimented with online courses, webinars and video content, and it built a fully digital programme around that experience. Kaori Ito, director of Carpigiani Gelato University, added that the new portal will keep offering fresh content and exclusive events, in the hope of meeting in person again at offices around the world.
